What Knives Do You Really Need?

This is a discussion I first had with my wife before we actually got married.
Being single and not wanting to eat frozen dinners or take-out for every meal, every day, I learned how to cook. Being single and having expendable income also meant that I could buy pretty much whatever I needed, which eventually led to a set of Calphalon pans, Henckels knives and many cookbooks. Over time I learned to make whatever I wanted and had all the pans, cutlery and appliances that I needed.
My (future) wife, on the other hand, was the exact opposite. Liking very basic food, she cooked with only 1 or 2 pans and 1 knife, which suited her needs perfectly.
Granted that most professional chefs have a knife for every appllication, but the certainly must be a happy median between having a knife for every task, and only one knife for every task. Since this is obviously a matter of preference, I thought I’d let a professional explain what he thinks are the basic knives that every cook should have, and why.
